Kidney beans will do, but small dark red beans are better
Put the beans in a pot with enough water to cover and soak overnight
In the morning drain and rinse the beans and bring them to a boil. Add all of the other ingredients. Reduce heat and simmer for at least 3 hours
They should become very creamy, but most of them should be whole
Add cold water as needed
This goes well with smoked sausage and sliced raw onions
Serve over fluffy long grain rice
